Ingredients & Directions

30 jalapenos, halved and seeded
1 12-ounce package goat cheese, softened
2 tablespoons sun-dried tomatoes, minced
1 teaspoon dried basil
1 pound bacon

Preheat oven to 375°F.

Cut jalapenos in half lengthwise; remove seeds. In small bowl, beat softened goat cheese, sun-dried tomatoes and basil.  Refrigerate until firm.  Spoon mixture into each jalapeno half. Depending on the size of each stuffed jalapeno, use ⅓ to ½ a slice of bacon to wrap around the peppers.  Secure the bacon with a toothpick. Place on a baking sheet and bake for 20 minutes or until bacon is done. Serve warm.
