Ingredients & Directions

Dressing:
¼ cup hot pepper jelly
2 tablespoons
¼ cup fresh lime juice

Salad:
2 cups fresh watermelon, seeded and diced
1 cup fresh peaches, peeled and diced
⅓ cup fresh basil, chopped
⅓ cup fresh chives
3 large heirloom or roma tomatoes, sliced in ½-inch wheels
salt and pepper to taste
fresh basil sprigs for garnish

Whisk together the first 3 ingredients to make the dressing.

Toss the watermelon and peaches with the chopped basil and chives. Arrange the sliced tomatoes on a platter. Top with fruit and herb mixture.  Drizzle with dressing and sprinkle with salt and pepper to taste. Dress with fresh basil and serve.
