¼ cup fresh apple cider
3 Tbsp extra virgin olive oil
1 Tbsp cider vinegar
1 Tbsp Dijon mustard
1 finely chopped small shallot
½ tsp coarse salt
¼ tsp freshly ground pepper
Shake all ingredients together and serve.
