4 egg whites
2 ⅔ cups sweetened flaked coconut
⅔ cup sugar
¼ cup all-purpose flour
½ teaspoon clear vanilla
¼ teaspoon salt
¼ to ½ teaspoon almond extract
Chocolate chips, optional
Heat oven to 325°F. Spray cookie sheets with cooking spray. In a large bowl, mix all ingredients together, blending well. Onto cookie sheets, drop dough by rounded teaspoonfuls. Bake 18 to 20 minutes. Immediately remove from cookie sheets and place on cooling racks.
