Gourmet Buffalo Burgers

Burgers:
1 tablespoon vegetable oil
1 cup onion, diced
1 egg, beaten
1 teaspoon dried rosemary
1 teaspoon dried thyme
2 teaspoons Worcestershire sauce
2 teaspoons brown sugar
½ teaspoon salt
¼ teaspoon black pepper
1 pound ground buffalo meat
4 hamburger buns, toasted
lettuce and tomato slices for garnish
 
Sauce:
¼ cup BBQ sauce
¼ ketchup
¼ cup mayonnaise
 
Heat oil in a skillet over medium heat. Add onions and sauté, stirring occasionally, for 5 minutes or until softened; set aside to cool. In a large bowl, combine egg, rosemary, thyme, Worcestershire sauce, brown sugar, salt, and pepper. Mix in cooled onion and buffalo meat. Shape mixture into four ½-inch thick patties. Chill for up to 6 hours.
 
When ready to cook, preheat an oiled grill to medium-high heat. Cook patties for about 5 minutes on each side.
 
Combine BBQ sauce, ketchup, and mayonnaise to make sauce. Spread 2 tablespoons sauce on each bun. Place patties on buns and garnish with lettuce and tomato. Serve remaining sauce on side for dipping, if desired.
 
For an additional tasty topping, sauté 1 onion, sliced thinly into rings, in 2 tablespoons butter and 2 tablespoons Marsala wine for 10 to 15 minutes or until caramelized. Serve with burgers.
