⅓ cup butter, melted
¾ cup white sugar
2 eggs
1 tablespoon orange juice
1 ½ cups flour
1 teaspoon baking soda
zest of 1 orange
½ cup sour cream
⅓ cup chopped walnuts
⅓ cup coconut
1 cup zucchini, unpeeled and shredded
Preheat oven to 325 degrees. Grease a 9×5 inch loaf pan.
In a large bowl, stir together the melted butter and sugar. Add the eggs and orange juice, mix well. Combine the flour, baking soda, and zest, stir into the butter mixture until smooth. Finally, fold in the sour cream, walnuts, coconut and zucchini. Spread evenly into the prepared pan.
Bake at 325 degrees for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.
