1 pound baby carrots
2 tablespoons olive oil
2 tablespoons chopped fresh thyme
¾ tablespoon sea salt
1 teaspoon grated lemon zest (rind)
⅛ teaspoon black pepper
1 finely chopped green onion
Preheat oven to 450º F. In a large bowl, combine carrots and next three ingredients (olive oil, chopped thyme, salt); toss well.
Spread carrots in a single layer on a baking sheet. bake at 450º for 30 minutes or until tender and lightly browned, stirring every 10 minutes. Remove from oven. Transfer to a serving bowl sprinkle with lemon zest, pepper, and green onion; toss well. Serve immediately.
