1½ cups unsalted butter, softened 1 cup sugar 1 tsp vanilla 3cups all-purpose flour ½ tsp salt 1 tbsp cinnamon 1½ tsp ground ginger ¾ tsp ground cloves In the bowl of a stand mixer, mix together butter and sugar until just combined. Mix in the vanilla. Mix together flour, salt and spices. With the mixer on low, add the flour mixture to the butter mixture, mixing until a dough starts to form. Roll dough into two 8-inch logs and freeze. Baking the cookies: Preheat oven to 375 degrees. Unwrap the dough and cut it into ½-inch rounds. Bake for 15 to 18 minutes, until edges begin to brown.
