½ cup low-fat coconut milk
1 fresh red chile, seeded and thinly sliced (Thai or Serrano)
1 thinly sliced scallion
2 Tbsp fresh lime juice
1 Tbsp thinly sliced fresh mint
2 tsp safflower oil
¼ tsp coarse salt
Shake together all ingredients and you’re done! How easy was that?
