Watermelon Feta Bruschetta
2 cups watermelon, diced
1 cup Feta cheese, crumbled
2 tablespoons fresh chives, chopped
1½ tablespoon balsamic vinegar
French bread
1 garlic clove
olive oil
With a serrated knife cut bread into ½ inch-thick slices. Oil and rub cut garlic clove on one side of each slice of bread. Toast bread. In a bowl, toss together watermelon, cheese, chives, vinegar and salt and pepper to taste and mound about 1 tablespoon on oiled side of each toast.
Yield: 4-6 servings.
