Ingredients & Directions

6 hard boiled eggs
2 teaspoon shallot, chopped
2 tablespoons reduced fat mayonnaise
1 tablespoon fresh basil, chopped
3 slices bacon, torn in pieces
1 cherry tomato, halved
Coarse black pepper to taste

Cut 6 hard boiled eggs in half lengthwise; remove yolks.
Combine chopped shallots, reduced fat mayonnaise, and chopped fresh basil in a small bowl.
Add egg yolks and mash.
Fill each egg half with egg yolk mixture.
Stick one or two pieces of bacon into the side of the mixture.
Garnish with half cherry tomato.
