Grilled Apple Sandwich
Ingredients & Directions
2 slices whole wheat bread
1½ teaspoons olive oil
½ Granny Smith apple, peeled and thinly sliced (use a mandolin or food processor for best results)
⅓ cup shredded Swiss cheese, or baby Brie cut into small cubes, rind removed
Preheat a skillet over medium heat. Lightly brush 1 side of each slice of bread with olive oil. Place 1 slice of bread, olive oil-side down, into skillet. Arrange apple slices evenly over bread. Sprinkle with cheese and top with remaining slice of bread, olive oil-side up. Cook until bread is golden brown, then turn sandwich and cook 1 to 2 minutes longer or until the other side is golden brown and the cheese has melted.
Yields: 1 sandwich
