Ingredients & Directions

3 Roma tomatoes, seeded and diced
2 cloves garlic, minced
1 or 2 jalapeno peppers, seeds and ribs removed, minced
¼ cup red onion, finely chopped
3 cups green cabbage (for extra flavor and color, use 2 cups green and 1 cup purple cabbage)
1 cup fresh cilantro, lightly packed, chopped
Lime juice from 2 limes
Salt to taste
 
Combine the tomatoes, garlic, jalapenos, red onion, cabbage, cilantro and lime juice in a large bowl. Season with salt to taste. Refrigerate for several hours before serving.
 
Great with Lime Cumin Tortilla Chips or Baja Halibut Tacos.
 
Yields: 6-8 servings
