Ingredients & Directions

3 cups raw mixed nuts (we used pecans, almonds, and cashews)
½ cup raw pumpkin seeds
2 tablespoons butter
½ teaspoon ground thyme
1 teaspoon ground cumin
½ teaspoon ground mustard
¼ teaspoon allspice
½ – 1 teaspoon cayenne pepper
½ teaspoon white pepper
½ teaspoon coarse black pepper
2 teaspoons brown sugar
2 teaspoons kosher salt
1 cup honey-roasted peanuts

Preheat oven to 350ºF.

Mix the raw mixed nuts and pumpkin seeds (not the honey-roasted peanuts) in a bowl and set aside. Melt the butter in a small saucepan over medium heat. Add all the spices except for the salt to the pan and simmer for one minute. Pour the butter mixture over the nuts, add the salt and toss well to coat. Spread the nuts out on a baking sheet in one layer. Roast the nuts in the preheated oven until they are golden brown, about 20 minutes. Remove and let cool. Add honey-roasted peanuts to mix before serving.
Yields: 4½ cups of nuts
