Ingredients & Directions

1 large cucumber, sliced
1 medium heirloom tomato, sliced
15 sweet yellow cherry tomatoes (or grape tomatoes)
2 sweet banana peppers, sliced into rings
½ Medium white or yellow onion, sliced into rings
1 & ½ cups watermelon, diced
2 ripe peaches, sliced
20 basil leaves, small or torn
½ teaspoon lime fresco salt, or sea salt with ¼ teaspoon lime juice
black cracked pepper to taste
¼ cup extra virgin olive oil
1/3 cup strawberry balsamic, or other citrus balsamic

Mix all veggies and fruit together.  Add salt, pepper, olive oil and balsamic.  Lightly toss and mix ingredients.  Remix before serving.
