Ingredients & Directions

12 tomatillos, shelled
1 small yellow onion, rough chopped
3 jalapenos, whole with stem removed
2 tablespoons sugar
1 cup water
Juice of 2 limes
1 bunch cilantro, chopped
Salt and pepper to taste
 
Combine all ingredients in a saucepot except cilantro, salt and pepper.  Simmer for 10 minutes or until tomatillos are very soft.  Remove from heat and puree in blender.  Add cilantro and season with salt and pepper.
 
Yields: 10 servings
